In Orlando, if you plan on going to WDW and you're willing to pay the price then I would recommend staying at one of the onsite WDW moderate resorts. You would surely love the Animal Kingdom resort.
In Sanibel try the Sundial Resort. They have 5 pools (you can never have too many pools for the kids) and a kids club. Rates run from $150 a night in the fall and 2 bdrm units in the $300's during the busy season. The kids will love finding shells too. The resort has tennis courts, a golf course and a few restaurants on site as well.
Being that Orlando is home to Disney World, every hotel is "kid friendly". You might want to stay around the Disney area in their Disney Resort hotels. Just type "Disney Hotels" in a search engine.
Since there is so much competition due to the number of hotels in the Orlando area, you won't be paying anywhere near $300 a night, but rather for the whole stay in the hotel.
