My experience at the Carillon has been...interesting. I will concede that their spa and gym facilities are nice, as are the rooms and views. However, the food in the restaurant and by the pool is so bad, so so bad, that I have genuinely wondered if I am on candid camera. I asked for a steak medium and they said it came with lyonnaise potatoes. They brought a charred overlooked filet on burned sliced potatoes. I sent it back and the waiter was nice and they brought an actual raw piece of meat. The waiter was visibly awkward since this was clearly terrible cooking. The third time it was burned again. I switched by order to a salad. And nothing was said another the potatoes, but lyonnaise they were not. My moms seabass was dry and our heirloom tomato appetizer was made with one mealy and one not yet ripe tomato. We obviously did not return again for dinner. However we did have breakfast included and every morning was like something out of a comedy sketch, spoiled milk, over salting of eggs to the point that the crystals are visible, and chlorine tasting oatmeal are just a few examples. I'm not saying the food isn't good or that you won't get fine dining....I'm saying that it's AWFUL!!!! (Not to mention that the restaurant smells like mildew, the service is slow, and the decor is hideous.) They need to hire a completely new chef, and redo the menu. I will never stay here again and with food like this it should not be considered a leading hotel.

The worse hotel in Miami beach. We used to go there when it was the canyon ranch and we loved it. Now the service is bad and prices are higher. The food is terrible, I ordered a salmon it was super dry and partly burned. It seems like now they use less quality ingredients. Let's put it this way, less quality for everything!!!

Since changing from Canyon Ranch to Carillon, MANY horrible changes have been made at this resort. All of the changes that I have seen were no doubt made to increase the profit of the resort, while coincidentally (exponentially) decreasing the enjoyability for guests and residents. It wasn't enough that the property values for owners here decreased 20% when the resort lost the Canyon Ranch name, now the resort is trying to chase hotel guests away. They have simultaneously cut staff and increased prices. So now you pay more and get less. If you want to be nickel-and-dimed to death, wait 45 minutes for food and 30 minutes for your car from the valet, please feel free to waste your money here. Otherwise, you can find much better value/service/amenities for your money much closer to South Beach or Bal Harbour. Avoid this waste of money.

One of the best health and wellness hotels I have stayed at. I stayed at canyon ranch in tucson (sister hotel until 1/15) and this is WAY better. The classes and instructors were all amazing.  The hotel staff was also really nice, friendly, and helpful. The food was amazing too. Also, the hotel is only 10 min taxi from south beach restaurants and shopping. I would definitely stay here again. Highly recommend it.

I haven't been since they lost the name Canyon Ranch but I absolutely loved everything about Canyon Ranch. I really hope they don't change the spa/pool/class areas as those are incredible! They could use a new restaurant concept (but please keep it organic!). Please see my blog below about this exciting new development. Canyon Ranch is my favorite place in Miami Beach.
